These super simple blender muffins are a huge hit in our family. I make them on repeat and they only last a few days because my kids gobble them up. They are completely grain free, so the texture is a bit different than your average muffin, but no one in our home seems to mind!
Jump to RecipeThere are five steps to making these that are great for breakfast, snacks, or on the go. One of those steps is turning on your oven to 400 degrees. From there grab, prep your muffin tin by use liners or non stick spray.
Combine ripe bananas, eggs (or flax eggs), maple syrup, vanilla extract, and baking soda to a blender. Once smooth, mix in chocolate chips my hand. Then add the mixture to your muffin tin.
We highly recommend Vitamix for a blender! It is an investment, but we use it all the time.
Bake for 12-15 minutes until golden brown. They keep well for a couple of days or make a double batch and freeze half for future snacking!

Ingredients
- 2 ripe bananas
- 2 eggs 2 flax eggs (alternative)
- 1 cup natural peanut butter
- 1/3 cup real maple syrup
- 1 Tbsp vanilla extract
- 1/2 tsp baking soda
- 1/3 cup chocolate chips
Instructions
- Preheat the oven to 400 degrees.
- Add 12 liners or spray muffin tin.
- Add everything but the chocolate chips to the blender and blend until smooth.
- Mix in chocolate chips by hand.
- Pour batter into muffin tins and bake for 12-15 minutes or until golden brown.
