Chicken Tortilla Soup

Hi everyone! Katie here! It is day three of ‘social distancing’ for our family, but I suppose we are treating it more like a quarantine. We are stocked up on groceries and we have committed to staying in as much as possible. Before I talk about this chicken tortilla soup, let’s chat a minute about life these days, shall we?

I would love to say I have some great mom tips for all of you or a great homeschool schedule of sorts, but I do not. Logan and I are just trying to navigate this just like most of you are. We are trying to figure out working remotely full time, teaching our kids at home, getting them outside at least once a day, and trying to limit screen time as best we can. Oh yeah, and keep our sanity!  It has been a transition, but I am not complaining one bit. We are both very lucky to have jobs that are able to be done from home (for the most part) and wonderful employers who are, just like all of us, trying to make the best of this crazy time.

It’s just a time where we all need to be understanding, give ourselves and others grace, and try to stay as positive as we can. There is a silver lining to all of this, there always is. Sometimes you just have to look a little harder.

Melissa and I were on the phone the other day talking about how we can add value to all of your lives in this time of uncertainty. After all, we really believe blogging is all about adding VALUE to all of your lives. Our blog and social platforms are all about three things – easy/healthy cooking, affordable fashion, and connecting women online and in person. We don’t have mom tips or fun and creative ways to entertain your kids. We will share resources we stumble upon, but that’s just not really our thing. We need to stay true to ourselves and what we set out to do. 

We are spending most of our days just like all of you, in sweats and our hair up in top knots. We don’t really feel like posting clothing because let’s be honest, where are you going to wear it?! We had all kinds of items picked out and photographed for spring break, but now, since no one is even going, do you even want to see them? We don’t know. Part of us thinks yes, why not, it keeps some normalcy to our lives! Then the other part of us doesn’t see the point and almost wonders if it’s insensitive in some weird way. Like the world has better things to care about than our affordable fashion.

Then there is the cooking part of our blog. This is where we think we need to focus our time and energy. We are all home and most of us have a bit more time to cook than before. We are not all rushing in the door at 5:30pm trying to get food on the table (see!! A silver lining!) so it’s a good time to try new recipes and get cooking. Lots of women also find cooking and baking to be comforting, as do we! So let’s all get cooking together, right!? We have an idea around this and will share it soon – once we get our lives in order and some sort of routine going!

Last but not least, community. We want to keep growing our community and connecting our followers! Our heart breaks for small businesses in this crazy time, so we have a few ideas around how to grow our community by rallying around small businesses! More to come on this as well. We basically have some great ideas, but a little unsure of how to execute them with our own lives being so out of sorts. Like I said earlier, this is a time to pull together as a community and we would love to use our social platform to do so!

Now I should probably write something about this chicken tortilla soup, huh? I don’t have a whole ton to say about it besides that it is amazing, super easy, and you should definitely try it! Chicken Tortilla Soup

Equipment

  • Large cooking pot or dutch oven

Ingredients
  

  • 2 tbsp avocado oil (or other cooking oil)
  • 1 onion (I use a sweet yellow onion, but white or purple would would just fine.)
  • 2 tbsp minced garlic
  • 1 7 oz can of diced green chilies (or chop up 1-2 jalapeno peppers)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 1 qt chicken bone broth (chicken broth works fine as well)
  • 2 15.5 oz cans of fire roasted diced tomatoes – undrained (plain diced tomatoes work as well)
  • 1 14.5 oz can of black beans – drained and rinsed
  • 1 cup frozen sweet corn
  • 2 cups rotisserie chicken – chopped (or 2-3 chicken breasts cooked and chopped)
  • 2 limes juiced
  • 1 cup fresh cilantro – roughly chopped
  • salt and pepper to taste
  • Serve with avocado, crushed tortilla chips, sour cream, and shredded cheese

Instructions
 

  • In a large saucepan heat the avocado oil. Add the onion and cook for 2 minutes. Once the onion has softened add the garlic, green chilies, cumin and chili powder and cook for another minute.
  • Pour the chicken bone broth, tomatoes, beans and corn into the pot and bring to a boil. Once at a boil lower heat to simmer and add your chopped/cooked chicken. Let everything simmer for about 15 minutes and then remove from heat.
  • Add lime juice and fresh cilantro to the pot and stir. Season to taste with salt and pepper.
  • Serve in bowls with shredded cheese, sour cream, crushed tortillas and avocado! Enjoy!
