Cinco de mayo is only a few days away and we wanted to share a Cinco de mayo Roundup with all of our favorite Mexican inspired recipes. This year looks a little bit different, since we can’t celebrate or enjoy a meal (or marg) with friends. We can still enjoy a delicious meal with our families though. So we are here to inspire you with some really yummy options!
Mexican flavors are my absolute favorite. The spices, cilantro, onion, good meats… I’ll take it all. The recipes we are sharing today are all loaded with flavor and relatively easy to make! Here is our Cinco de mayo Roundup.
Chicken Enchiladas Verdes
This recipe is the most popular recipe on our site. It uses simple ingredients like chicken, salsa verde, and cheese. It is also extremely easy to make. You throw the chicken in the crockpot with the salsa, shred the chicken with a hand mixer and assemble your enchiladas. So easy and they are a favorite!
Korean BBQ Chicken Tacos
These are another blog favorite. You also use a crockpot to cook them, which is perfect and they are bursting with flavor! The combination of sweet and savory is so good.
Crispy Chicken Tacos
This recipe pretty much speaks for itself. Crispy chicken tacos? What’s not to love? We love using rotisserie chicken in the recipe to keep it simple.
Beef Enchiladas Rojas
These are the “opposite” of our Chicken Enchiladas Verdes. They are also super simple and I mention in the post how I feel that the secret to these enchiladas is a homemade red sauce. It’s not necessary, but I feel like it takes them to the next level! This recipe also includes a step by step video tutorial on how to make them.
Crockpot Citrus Carnitas
This is a recipe that I just shared. It’s maybe my favorite of the bunch. There are a few more steps to make it, but I promise that the extra time is worth it. If you’re a traditional taco fan, you need to trust me here with the toppings and stick to the onion and cilantro. Yum!
Chicken Tortilla Soup
I love soup and Katie hit it out of the park with this one. It’s as simple as chopping some rotisserie chicken, adding some cans of beans, tomatoes, broth, etc. and you’re all set. Again, it’s all about the toppings. Add some sour cream, fresh cilantro, avocado and it’s so good.
Fish Tacos with Sriracha Aioli
We have shared a lot of chicken recipes. If you’re more a of fish taco fan, you will LOVE these. Any white fish will do and the seasoning and sriracha give it so much flavor!
