Brett and I had a fresh Greek Salad a week or so ago at Blue Kouzina when we were in Lido Key, Florida! They have some really amazing restaurants in Armand Circle and this was one of the places we stopped for dinner. We ordered the Greek Salad as an appetizer and were blown away how simple, yet delicious it was. Everything was just so fresh and the ingredients all complimented each other so well. So, I decided I wanted to recreate it! It’s a combination of some of my favorite vegetables and the dressing is perfect!
This salad is best as a side, and is good alone or served on top of a bed of greens! We tried both when recipe testing and it was great! I actually think this salad is perfect for the summer when you have fresh cucumbers and tomatoes from your garden or local farmers market.

- With grilled chicken and put it over a bed of greens.
- On the side of falafel, pita, and hummus.
- Enjoy it as is for a snack or side dish to any meal!

Fresh Greek Salad
Ingredients
- 2 cups diced cucumber
- 1 cup cherry or grape tomatoes (halved)
- 1/2 cup finely sliced red onion
- 1/2- 1 cup kalamata olives (based on preference)
- 1/2 cup feta (block or crumbles)
Dressing
- 1/4 cup EVOO
- 1/8 cup red wine vinegar
- 1 tsp oregano
- 2 tsp salt
Instructions
- Combine all of the fresh ingredients in a medium bowl.
- Add the dressing ingredients to a small bowl and whisk until combined. It will thicken.
- Add sauce to other bowl and stir to coat everything evenly.
- Enjoy as is, as a side or over a bed of greens!
