These gluten-free oatmeal raisin cookies are so good and perfect for grab and go! They make a good snack, breakfast or even the perfect little treat. We are always looking for healthier options for ourselves and for our kids and these cookies are perfect! They are gluten free and lightly sweetened with coconut sugar, which has a lower glycemic index than regular sugar.
I have been gluten-free for almost six years now and I have tried many different recipes. Some were great and some were total flops, but my all time favorite, no fail place to go for baking recipes is Zenbelly. Everything I have tried from her site has been awesome!
In particular, she has an amazing chocolate chip cookie recipe that I’ve been making for years. Her recipe inspired me to create an oatmeal raisin cookie with a similar base. While her recipe is grain free, I decided to add oats to mine and modify the other ingredients!
Healthier Baking Alternatives
Some of the ingredients I use aren’t your typical baking ingredients, but they should be! Even if you aren’t officially gluten free, these are great pantry staples and they are becoming easier and easier to find.
Five years ago, almond flour was really hard to find and super expensive. It still is somewhat expensive when you compare it to while flour, but I have found that Costco and Aldi are the best places to get it. Aldi just started carrying it a few months ago. Costco sells a 3 lb. bag of the Kirkland brand for just around $10 and it lasts me a long time.
Arrowroot flour can be hard to come by, but I get the Bob’s Redmill brand at my local Pick N Save. I have also ordered it through Thrive Market. Arrowroot helps give baked goods a better texture and I also use it to thicken sauces and soups. You can easily sub tapioca starch one for one, which is easier to find and a little bit cheaper.
Everything else should be items you can easily find in your pantry or at the store. I encourage you to expand your baking horizons and give these healthier alternatives a try! You won’t regret it. Gluten Free Oatmeal Raisin Breakfast Cookies
Ingredients
- 4 Tbs. butter/ghee (melted)
- 1 egg
- 1 tsp. vanilla
- 3/4 cup almond flour
- 1/2 cup quick oats
- 1/2 cup arrowroot (can sub tapioca flour)
- 1/4 cup coconut sugar (can sub brown sugar)
- 1/2 tsp cinnamon
- 1/4 cup raisins
Instructions
- Preheat the oven to 350 degrees.
- Mix together the wet ingredients (first 3).
- Combine the dry ingredients (almond flour, oats, arrowroot, coconut sugar and cinnamon).
- Mix the dry ingredients into the wet ingredients.
- Add in the raisins and stir to combine.
- On a baking sheet lined with parchment paper, scoop the dough into one inch balls.
- Flatten slightly with your fingers.
- Bake for about 15 minutes or until golden brown on the outside.
- Cool and enjoy!
