I made this Healthy Chicken and Cabbage Soup a few weeks ago and many of you were excited for me to share the recipe! So I am finally getting around to it. First of all, I must give credit where credit is due. This is a recipe from my aunt Val who is an amazing cook! I’ve actually learned a lot from her and pretty much everything she makes is delicious. So with a few minor modifications, I’m excited to share this recipe for you!
Cabbage isn’t one of those vegetables that we eat very often. We eat it on St. Patty’s Day when my mom makes corned beef and cabbage, we eat it in “egg roll in a bowl” and we eat it in this soup! Does anyone else have recipes they love with cabbage? It’s surprisingly really healthy for you! We are trying to eat a wider variety of vegetables in our house both to expose our girls to different foods and for the nutritional benefits.

I am a huge soup fan in the winter and this healthy chicken and cabbage soup is one of my favorites! It would be an awesome soup to prep ahead of time for the week. You could even store in your freezer for a time when you’re not feeling the best.
Modifications – change it up!
This soup calls for chicken and chicken broth, but if you’re a vegan or vegetarian, you can definitely make it work for you. Replace the chicken for chickpeas and the chicken broth for vegetable broth. Honestly, you can use pretty much any veggies you have on hand in this soup! We are always for using up what you have. Healthy Chicken and Cabbage Soup
Ingredients
- 1 1/2 cup rotisserie chicken (chopped)
- 1/2 small head of cabbage (chopped)
- 1 small yellow onion (chopped)
- 3 celery stalks (peeled and chopped)
- 4 large carrots (peeled and chopped)
- 2 tsp minced garlic
- 1 tsp oregano
- 1 tsp basil
- 1 Tbsp tomato paste
- 2 quarts chicken stock or broth
- 1-2 cups prepared rice of choice
- 2 Tbsp avocado oil
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- In a large pot, heat the oil over a medium high heat.
- Add in the garlic, onion, carrots, celery, salt and pepper.
- Saute about 5 minutes or until veggies have softened slightly.
- Add in the basil, oregano and tomato paste and stir to combine.
- Once combined, add in the broth and cabbage.
- Cook for about 25 minutes.
- While the soup is cooking, you can prepare the rice.
- About 5-10 minutes before you want to eat, add in the rice and chicken.
- Taste and add more salt and pepper to taste!
- Enjoy!
