We have a recipe for Apple Crisp on our site, but we wanted to give you another recipe for this Healthy Mixed Berry Crisp. I have shared pictures of this crisp on Instagram and many of you have asked about it. So, I thought I would share this delicious, yet simple recipe. Summer is coming and berries will be fresh, easy to find and perfect for this healthy version of a crisp.
Crisp is my favorite dessert, but traditional crisps are often too sweet for me. I have noticed that the less sugar I eat, the less I need of it for something to taste sweet. This crisp is healthy, low in added sugar and so tasty. Heck, I even eat it for breakfast sometimes. I just swap out my scoop of ice cream with a spoonful of coconut yogurt or some homemade whipped cream.
I also love this recipe because it is gluten-free, easily made vegan (sub coconut oil for butter) and it uses simple, whole ingredients. The topping is a combination of oats, almond flour, cinnamon, coconut sugar and butter. The filling is simply frozen or fresh berries and a little arrowroot to thicken it and prevent it from being too runny.
Fresh or frozen berries?
When it comes to picking your berries, fresh are obviously a great choice in the summer when they are readily available. However, in the winter, my go-to is always frozen fruit. Check out this article that explains why frozen fruits and vegetables are such a great option!
Lastly, I love that this recipe takes minutes to make. Whether you’re having a group of friends over (hopefully soon, sigh) or just making a small batch for you and your significant other, it’s so fast and easy. I often make two mini ones for Brett and me. I pop them in the oven right before we go upstairs to put the girls to bed. When we come down, they are ready to go! It’s perfect! Healthy Mixed Berry Crisp
Ingredients
- 4 cups mixed berries (I love using raspberries and wild blueberries. If you're using bigger fruit like strawberries or even blueberries, I would cut them into smaller pieces.)
- 1 Tbsp. arrowroot powder
- 1/2 cup butter or coconut oil (melted)
- 1 1/2 cup oats
- 1 cup almond flour
- 1/2 cup coconut sugar (brown sugar works too)
- 1 Tbsp. cinnamon
Instructions
- Preheat oven to 350 degrees.
- Grease the bottom of a pie pan or 8 by 8 square pan with butter or coconut oil.
- Toss the mixed berries in arrowroot powder and add to pan.
- Combine the melted butter or coconut oil, oats, almond flour, coconut sugar and cinnamon.
- Spread evenly on top of the fruit.
- Bake for approximately 20 minutes or until the fruit is bubbling and the top is golden brown.
- Allow to cool slightly and serve with your favorite ice cream!
