Instant Pot Chili Mac wasn’t planned – it was just something that happened and was a wonderful surprise. I put a bunch of ingredients in our Instant Pot that resembled chili, and crossed my fingers that it would work out! And it did! I made it a few times to make sure it was just right, and I think I have it. This would be the perfect for a quick weeknight meal, game day, or anytime you’re in a pinch and need something quick!
I got an Instant Pot a few years ago and still always preferred using a crock pot for meat, etc. I think meat tastes better and is more tender when it can cook slowly, but I will use the IP when I’m in a pinch. But when it comes to cooking pasta, or rice.. I’m loving it! You can have meals ready in minutes.

Instant Pot Chili Mac

- Instant Pot
Ingredients
- 1 lb. ground beef
- 1/2 onion (chopped)
- 1 can diced tomatoes (15 oz)
- 2 Tbsp tomato paste
- 1 can kidney beans (drained)
- 1 12 oz box pasta of choice
- 2.5 cups beef broth
- 1.5 Tbsp. chili powder (or you can skip the spices and add 1 Hy-Vee chili spice packet)
- 1 tsp cumin
- 1 tsp salt
- 1/4 cup sour cream
- 1/2- 1 cup your favorite cheese
Instructions
- Start by browning the beef and onion using the saute feature.
- Once browned, add in everything into the Instant Pot except the cheese and sour cream.
- Stir to combine.
- Set to manual (the cook time will be the time to cook the pasta divided in half and then subtract 2.). If the cook time is 8 minutes on the pasta box. Cut in half – 4 and then subract 2. So you will set the cook time to 2.
- Make sure the vent is on sealing.
- Release pressure once done, and stir in the sour cream and cheese.
- Serve immediately and enjoy!
