Instant Pot Cilantro Lime Rice

Instant Pot Cilantro Lime Rice is going to be your go to when it comes to a Mexican side dish! I started making rice in the Instant Pot a year or so ago and it’s pretty much all I do now. It takes about 2 minutes to prep and cooks for 3 minutes. What’s not to love? This recipe pairs well with our enchiladas, tacos, tostadas, and pretty much everything. Once you start making your rice this way, you won’t want to go back! 

Something to note about this recipe is that I use chicken broth. You can absolutely use water, but I find that the chicken broth just gives the rice so much more flavor. I’ve been using broth to cook rice for years and will never go back!  

Can I make this on the stove?

Yes, you can absolutely make this recipe on the stove! To do this, do all of the steps and then after toasting the rice, add everything else and bring it all to a boil. Once boiling, reduce heat to medium-low and cover! It will take longer this way, but it just as effective! Once the rice is tender, just add the chopped cilantro!   

Feel free to play around with this recipe and add in your favorites. I have a few other Instant Pot rice recipes I need to perfect and get on the blog. I did traditional Mexican rice with tomato paste, peas, and carrots the other week and loved it. There are so many options when it comes to cooking in the Instant Pot.

Instant Pot Cilantro Lime Rice

Equipment

  • 1 Instant Pot optional

Ingredients
  

  • 2 cups rice
  • 2 cups broth
  • 2 Tbsp avocado oil
  • 2 tsp minced garlic
  • 1 tsp salt
  • 1 lime zest and juice
  • 1/2 cup chopped cilantro

Instructions
 

  • Start by rinsing the rice and set aside.
  • Using the saute feature, add oil and garlic to the Instant Pot.
  • Shortly after, add in rice and allow to toast/brown slightly.
  • Turn off saute and add in broth, salt, and the zest and juice of one lime.
  • Set to manual for 3 minutes.
  • Release pressure.
  • Mix in cilantro and it's ready to go!
  • Enjoy!
