Lahaina Pizza Company Copycat Chopped Italian Salad is a must try! We took our family to Maui, Hawaii over spring break and it was truly magical. All of it is. The weather, the smell of the air, the culture, and of course, the food. We ate at so many amazing restaurants, mostly seafood, of course. But on the last day, we decided to try out the Lahaina Pizza Company.
We spent quite a bit of time in Lahaina because it was so close to our resort. I am all about ambiance when it comes to restaurants and I love some good outdoor dining. The Lahaina Pizza company is located on the main street above some shops. It has this open balcony that I kept seeing from the street and I just knew I wanted to go.
I got the pizza, which was absolutely delicious, but I wanted to get some veggies in and the salad looked delicious. Before we dive into the salad, let’s talk about the pizza quickly. I am a classic Margherita pizza lover through and through and this pizza was not that. I love the thin-crust, Naples-style pizza made in a wooden oven, but this a more of a pan-style thick-crust pizza and it was FABULOUS. It reminded me of Rocky Rococo’s, but better.
Ok, back to the salad. It was fresh, filling, and delicious. I knew right away I had to try and recreate it. I actually texted Melissa a picture of it right away and told her how we had to make it happen. We both love to travel and many times traveling introduces you to new food, giving you new ideas for recipes. One thing I really love about this salad is that it’s more of a meal than an appetizer because of the protein. It has garbanzo beans and pepperoni.
We know many of you are dairy free, so if you want to try this one, just skip the cheese or use M’s favorite DF cheese, DF Shredded Parmesan from Trader Joe’s.
Sometimes I buy bottled Italian dressing and sometimes I make my own! It really just depends what I have time for. I have tried so many good recipes and really like this creamy Italian dressing from A Family Feast!

Lahaina Pizza Co. Copycat Italian Chopped Salad
Ingredients
- 2 hearts of romaine chopped
- 1 can quartered artichoke hearts chopped a bit more
- 1 can (15 oz) garbanzo beans
- 1 red bell pepper chopped
- 1 can black olives chopped
- 20 slices deli pepperoni slices quartered (do not buy the pre-packaged stuff)
- 3/4 cup cherry tomatoes halved
- 1/2 cup shredded Italian cheese blend
- Pepperchinis optional
- 1/2 cup Italian dressing of choice more or less depending on preference
Instructions
- put everything in a salad bowl and top it with dressing!
