Minute Monday breakfasts are finally here! We have been blogging Minute Mondays for a while, but up until now they have lived on Instagram. Well, we decided to finally get them on the blog! So here they are for you. Our goal for Minute Monday has always been and will always be to keep food simple. Minimal ingredients and only a few steps!
Here is our collection of Minute Monday Breakfasts for you! As we add to them, we will continue to update this post. Don’t forget about all our other breakfast recipes too!
Tater Tot Egg Bake
Hear me out. I feel like the tater tots take the "classiness" of this down, but they are actually a game changer in this recipe. You'll have to trust me!
Ingredients
- 1 dozen eggs
- 1/2 cup milk (of your choice)
- 1 lb. breakfast or italian sausage
- 1-2 cups chopped spinach
- 1/2 cup feta (sharp cheddar is good too)
- 1/2 bag tater tots
- salt and pepper to taste
Instructions
- Preheat your oven to 400 degrees.
- Spray the bottom of a 9 x 13 pan with oil.
- Brown sausage.
- Crack eggs into a bowl and whisk with milk while sausage browns.
- Layer in the sausage, spinach, and cheese into the pan.
- Pour egg and milk mixture over the top.
- Top with a little salt and pepper.
- Layer the top with tater tots.
- Bake for about 35-40 minutes or until tater tots are golden brown and eggs are cooked through.
Gluten Free Blender Waffles
These are a Buell family favorite and are naturally gluten free!
Ingredients
- 2 cups old fashioned oats
- 1 cup milk of choice
- 1.5 tsp. vanilla
- 1 overripe banana
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1-2 tsp. sugar (optional)
Instructions
- Put everything into a blender and blend!
- Use batter to make waffles in your waffle iron.
- Top with fruit, whipped cream, yogurt, peanut butter, maple syrup, honey, chocolate chips, or anything you want!
Egg & Veggie Breakfast Wrap
This breakfast wrap has been our go to the past few months. It's so good! Everything in the wrap is amazing, but it's the spinach sauteed in garlic salt that is the MVP.
Ingredients
- 1 large tortilla
- 1 Tbsp. chive and onion cream cheese
- 1 egg (scrambled)
- 1-2 Tbsp. roasted red peppers
- 4-5 cherry tomatoes (diced)
- 1 handful spinach
- 1 tsp. garlic salt
- 2 Tbsp. feta (optional)
Instructions
- Crack and scramble egg.
- Cook.
- While the egg is cooking, saute the spinach in some oil and garlic salt until soft.
- Spread the cream cheese on the tortilla.
- Layer in all the ingredients and fold it like a burrito.
- Lightly spray with cooking spray and toast in a pan on the stove.
- Turn as you go until all of the sides are crisp.
- Enjoy!
Breakfast Tacos
We eat these breakfast tacos on repeat in our house! They are the perfect, quick breakfast and OH SO tasty!
Ingredients
- 1-2 eggs (scrambled)
- 2 corn tortillas
- 1/4 cup cheese (I love sharp cheddar)
- salsa
- white onion and cilantro (chopped)
- 2 slices avocado
Instructions
- Scramble eggs on the stove in oil over a medium heat.
- While eggs are cooking, warm tortillas. My favorite way is over the burner if you have a gas stove.
- Once eggs are cooked, add to tortilla and then layer in the cheese, salsa, onion, cilantro, and avocado.
PB&J Breakfast Roll Up
Ingredients
- 1 tortilla
- 1 Tbsp. greek yogurt
- 3 spoonfuls peanut butter granola
- 1 Tbsp. jam of your choice
- 5-6 fresh raspberries (optional)
- drizzle of honey
Instructions
- Put all of the ingredients into the tortilla.
- Roll it up and enjoy!
