Mixed Berry Oatmeal Bake

I have made a lot of oatmeal bakes in my time, and I always thought they were too dry. Over the years I have also had to modify them to be gluten, dairy, and egg free as well. So I wanted to make one that could be any of those, but could also be made with those ingredients. And that’s why I think this recipe is so well loved. It can be modified to be whatever you need it to be and it’s still delicious.

A couple of notes and modifications.

We get a lot of questions about what oats work best for this recipe! I like to use quick oats for the texture, but honestly, any oats or combination of oats will do. I use these oats most often but also love these! Honestly, I think it’s all preference. So just play around with it!

Next up… let’s talk about making this dairy free. To make this recipe dairy free, I simply use dairy free butter and oat milk. We love oat milk in our house, but almond or any nut milk will work! So simple!

Lastly, I like to make this recipe egg free also, because one of my girls does better off of them. It’s so simple. Ground flax. 1 flax egg = 1 egg (1 Tbsp. flax and 3 Tbsp. water). This recipe calls for 2, so I just double it!

Mixed Berry Oatmeal Bake

Ingredients
  

  • 4 cups quick oats
  • 3.5 cups milk (I use oat milk)
  • 4 Tbsp. butter (I used DF butter)
  • 2 eggs / flax eggs (2 Tbsp. flax and 6 Tbsp. water)
  • 1.5 tsp. baking powder
  • 1/4 cup coconut or brown sugar
  • 1/4 cup maple syrup
  • 1 Tbsp. cinnamon
  • 1 tsp. vanilla
  • 2.5 cups frozen or fresh mixed berries

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray/grease a 9 by 13" pan.
  • Start by making your flax eggs (if you are doing this – skip if not) and set aside.
  • Next, melt your butter in a large bowl.
  • After you melt the butter, add in the rest of the ingredients to the bowl.
  • Mix thoroughly and pour into the greased pan.
  • I like to sprinkle the top with extra cinnamon and sugar.
  • Bake for 45 minutes or until a fork comes out clean.
  • Serve as is or top with a spoonful of your favorite yogurt! Enjoy!
