Nothing is better than mom’s egg salad sandwich! It is no secret that Melissa and I live in the Midwest and love the food that comes with our neck of the woods. Some of the best recipes are those that have been passed down from family member to family member. This one is not different. My mother’s egg salad sandwich is a nostalgic and delicious lunch!

Egg Salad Sandwich Prep
Once you have your hard boiled eggs prepped and ready, it’s time for the assembly!
Toast your favorite bread, I prefer sourdough bread. Egg salad also works great with pitas, hash browns, crackers, or on it’s own. Grab two hard boiled eggs, your favorite sweet relish, avocado mayo (trust me it’s better) and a pinch of sugar. Using a fork, mash the ingredients all up and place it on your toast. And there you go, the best egg salad sandwich, done in less than 2 minutes!
You can make a batch or individual sandwiches as you go. This is great for picnics, social events, or family meals.

Mom’s Egg Salad Sandwich
Ingredients
- 2 hard boiled eggs chopped
- 1-2 tsp sweet relish
- 1-2 tsp avocado mayo
- 1-2 tsp sugar
- 1/2 tsp paprika
Instructions
- Mix it all together and sprinkle with a little paprika (optional) and serve on lightly toasted sourdough bread.
- Chop 2 eggs
- Mix ingredients
- Sprinkle with paprika
- Serve on lightly toasted sourdough bread
