No Bake Energy Bites

I am sure you have all heard of ‘no bake energy bites’ by this point. I feel like they became very popular about 7 or 8 years ago, or at least that is the time that I was introduced to the wonderful world of no bake energy bites. My sweet neighbor brought these to me after I had Ellis. They were a life-saver when I was nursing because I would get shaky if I didn’t eat every two hours. I clearly remember nursing her while popping these in my mouth because I was SO hungry all of the time and this was the fastest way to get nutrients in my body.

If you search ‘no bake energy bites’ on Pinterest, about a million recipes will pop up. I have tried a few different recipes – some were ok and some were terrible. (I once tried a key lime version that was absolutely horrible.) These are the classic ones I always come back to. My kids are OBSESSED and I am ok with that because they are made with wholesome and nutritious ingredients. If fact, this is usually what their breakfast consists of. I pop four out of the freezer (two for each kid) and pair with some sort of fruit. They gobble them up fast, don’t complain AT ALL, and we are out the door and off to school and work. So basically these energy bites make my mornings easier. THIS is the cookie baller that also makes my life easier when I make them! I am all about making life easier! 😉

No Bake Energy Bites

Prep Time 20 minutes
Course Breakfast, Snack
Cuisine American

Equipment

  • stand mixer helpful

Ingredients
  

  • 1 cup oats
  • 1 cup shredded unsweetened coconut
  • 1/2 cup ground flaxseed
  • 1/2 cup natural peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla

Instructions
 

  • Mix all ingredients together – by hand in a bowl, using a stand mixer, or a hand mixer (whatever works)
  • Make into balls by hand or using a cookie scoop. Place balls on a baking sheet lined with parchment or wax paper. Freeze for an hour or so.
  • After they are frozen, transfer them to a ziplock bag or tupperware container and keep them in the freezer. Take them out about 10 minutes before you serve them or zap in the microwave for 15 seconds.

That being said, I always make a double batch because they go SO fast. They also serve as an after school snack at times. 🙂 One recipe makes about 14 (or so) energy bites and I much prefer to have a good 28 on hand. Logan will also grab them on the go in the morning. He travels around the midwest quite a bit for work, so he is in his car a lot. These work well to just grab and go!
