To be completely honest, I’m not sure what gave me the idea for this pomegranate chicken salad recipe. I’m obsessed with chicken salad and have always added blueberries to mine when I’ve made it in the past. I love the sweet and salty combination.
Pomegranates for under $1? Yes, please!
I was at the grocery store a few weeks ago, and saw that they had pomegranates at Aldi for under $1, so I decided to grab a few. My daughters love eating the seeds and I love tossing them on salads! I have also gotten a lot better at getting the seeds out and I’m always up for saving some money. Here is a video that shows how I’ve been getting the seeds out.
So when it came time to make my chicken salad recipe, I decided to skip the blueberries and try pomegranate seeds instead. The pumpkin seeds were also a last minute add in. I love the flavor and crunch that this chicken salad has. Of the four recipes I made that day, we all liked this one the best.
It’s not only great for its flavor, but for how easy it is! I recommend using rotisserie chicken both for flavor and to save time. I ended up shredding the chicken the night before, so when it was time to make the recipe, I just dumped everything else in, gave it a stir and it was ready to go. Pomegranate Chicken Salad
Ingredients
- 2 cups shredded (rotisserie) chicken
- 1/2 cup mayo
- 1/4 cup celery (peeled and chopped)
- 1/4 cup pomegranate seeds
- 2 Tbsp pumpkin seeds
- 1 tsp dijon mustard
- 1/4 tsp salt
Instructions
- Mix all of the ingredients except for a few pomegranate and pumpkin seeds in a large bowl.
- Serve in lettuce cups, on crackers, or toast.
- Garnish with remaining pomegranate seeds and pumpkin seeds.
Finally, and most importantly (duh) is that this chicken salad is so pretty! The pomegranate and celery make it so festive. I plan to serve this at our Christmas Day lunch. It would also make a perfect appetizer served with crackers or in small lettuce cups. Either way, it is delicious and worth the 10-15 minutes it takes to make it!
