Sausage Breakfast Burrito

Fridays have always felt like a mini celebration. Maybe it’s the weekend just around the corner or ending my week with a workout. Either way, I’ve made it a tradition to treat myself post-gym with something warm, savory, and totally satisfying: a gluten-free sausage breakfast burrito from Yola’s. There’s just something about a burrito after a workout.

But recently, I decided that I needed to try to recreate the magic at home.  I grabbed some of my favorite Jones Dairy Farm breakfast sausages—which are not only gluten-free but have really great, simple ingredients—and gave it a whirl.

Game. Changer.

These homemade burritos taste just like the ones from Yolas. I crisp up the sausage links until they’re golden, toss in some scrambled eggs, roasted potatoes, my favorite cheese, and wrap it all up in a gluten-free tortilla. I love to keep it simple, but honestly you can add in any ingredients you love. Either way—it’s delicious.

Now I can’t stop making them. What used to be a Friday-only treat has become regular rotation and a weekend brunch staple. There’s something kind of special about creating a favorite meal in your own kitchen and knowing exactly what’s going into it.

So while I’ll always love my post-workout Yola’s run, there’s something great about recreating that comfort at home—especially when it stars my favorite Jones Dairy Farm sausages. If you’re looking for a feel-good, protein-packed breakfast that feels like a treat but is totally doable? Try this!!

Sausage Breakfast Burrito

Quick and easy breakfast recipe sure to please!

Ingredients
  

  • 1 pkg gluten free tortillas
  • 4-5 potatoes of choice diced
  • 5-6 scrambled eggs 1-2 eggs per burrito
  • 10 Jones Dairy Farm pork sausage 1-2 per burrito
  • 1 cup Shredded cheese of choice
  • 1-2 tbsp Oil of choice
  • 1/2 tsp Salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder

Instructions
 

  • Start by preheating the oven to 400.
  • Add the diced potatoes to a pan and toss with about 1-2 T of oil (I used avocado) and 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp garlic powder.
  • Bake for about 20 minutes or until golden brown.
  • Next cook the sausages on the stove or in an air fryer according to package directions. Once they are done, cut them into small pieces.
  • Crack and scramble eggs and then in a pan with oil over medium high heat, add the eggs, a little seasoning and cook.
  • Once everything is cooked, assemble the burrito layering in each ingredient and then fold in the sides and roll up.
  • Place it in a hot, oiled pan and toast until both sides are browned.
  • Enjoy with fresh fruit and a hot cup of coffee!!
