I plan to make two versions of my egg bake this Christmas. I love it and think it’s the perfect breakfast option because it is quick, easy, it fills you up and everyone loves it. Serve it with some fresh fruit, biscuits or a yogurt parfait and you’re all set!
I have been making a version of this egg bake for years now. A few years ago, my husband and I did a Whole30 and we basically lived on different versions of egg bake for breakfast (without the cheese of course.. haha). I loved playing around with the flavors though.
It’s so versatile. You can play around with the meats, the veggies and add really anything you have on hand. It’s a great way to use up things in your fridge or freezer. While I plan to share more versions of this in the future, this sausage, spinach and feta egg bake is my favorite.
Something about the feta makes it my favorite. I just love the flavors together. If you’ve never tried feta in an egg bake, you are missing out. It’s so good! I say give it a try, even if you aren’t a huge feta fan. You won’t regret it. 🙂 I also hate wasting food, so if you already have the feta on hand, here is another one of my favorite salad recipes that uses feta.

Sausage, Spinach & Feta Egg Bake
Ingredients
- 1 dozen eggs
- 1 lb. breakfast sausage (You can use links too, just cut them up.)
- 1.5 cups spinach (chopped)
- 1/2 cup feta (You can really use whatever cheese you like. Pepperjack would be good too!)
- 1/2 cup milk (I used almond)
- 1 tsp. oil (or spray to grease the pan)
- 1 tsp. salt & pepper (or to taste)
Instructions
- Preheat the oven to 375 degrees.
- Brown the sausage in a pan over medium-high heat.
- Spray or coat a 9 x 13" pan in the oil.
- Crack and whisk the dozen eggs in a separate bowl.
- Add the milk to the eggs and whisk again.
- Once the sausage is browned, add to the pan.
- Top with the chopped spinach and feta.
- Pour the egg mixture over the top.
- Season with salt and pepper.
- Bake for 20-25 minutes or until a fork comes out clean.
- Enjoy!
