I don’t know why more people aren’t talking about risotto, but this Sheet Pan Dinner with Instant Pot Risotto is seriously one of my favorites. The risotto is to die for and it’s so easy to make in the Instant Pot. It’s creamy, delicious, and pairs well with almost any protein which makes it the perfect side dish.
What is arborio rice?
When it comes to risotto, you can’t use regular rice. Well you can, the texture just won’t be right! Arborio rice is easy to find in the grocery store. I get mine at Metro Market in the rice aisle, but you can get it online here.
Is risotto gluten free?
Yes! If you’re someone who needs to eat gluten free, this is a great option for you! Rice is naturally gluten free. And there is no thickening agent like flour either, so you should be all set.
I actually make this recipe dairy free too by using the Trader Joes dairy free parmesan cheese! Woodman’s has quite a few dairy free options as well if you don’t have a Trader Joe’s nearby.

Sheet Pan Dinner with Instant Pot Risotto
Ingredients
Sheet Pan Ingredients
- 4-5 cups veggies peppers, broccoli, asparagus, zucchini, Brussel sprouts, etc.
- 1 package sausages whatever is your favorite!
- 3-4 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
Risotto
- ½ onion diced
- 2 tbsp garlic minced
- 1½ cups arborio
- 2 tbsp olive oil
- 3 cups broth chicken or vegetable
- 1 tsp salt
- ½ tsp pepper
- ⅓ cup parmesan cheese regular or dairy free
Instructions
Sheet Pan Meal:
- Preheat oven to 425℉ degrees
- Start by chopping up veggies and your sausages into bite sized pieces
- Add to a bowl and then coat with oil, salt, pepper, garlic powder, and onion powder
- Toss and then spread on a sheet pan lined with parchment paper
- Bake for about 20 minutes or until just slightly browned and crispy
Risotto
- Start by dicing 1/2 an onion and mincing garlic, if you don't have it pre minced Add in rice and stir to coat/ lightly toast. Turn off the saute feature and add in 3 cups of broth (chicken or vegetable), 1 tsp. salt and 1/2 tsp pepper. Turn on "manual" for 6 minutes and make sure it's on "sealing". After 6 minutes, release pressure and stir in 1/3 cup shredded parmesan cheese (regular or dairy free work!).
- Measure out 1.5 cups of arborio (this is important) rice and rinse
- Turn Instant Pot to sauté
- Add oil, onion, garlic and cook for 1 minute or until soft
- Add in rice and stir to coat/ lightly toast
- Turn off the sauté feature
- Add in broth, salt, and pepper
- Turn on "manual" for 6 minutes and make sure it's on "sealing"
- After 6 minutes, release pressure
- Stir in 1/3 cup shredded parmesan cheese
