This Sheet Pan Veggies & Sausage recipe is one of our most requested recipes. We share it often in stories, but it needs a place to live on our blog where you can all reference it when you need it! With that said, I have shared similar recipes on the blog, but I want to give you the OG as well! We have a running joke in our house that I make this Sheet Pan meal weekly (which I don’t actually). But despite their complaining, my family actually loves it.
I started doing sheet pan veggies years ago because of my aunt. She made an entire pan of roasted veggies for the holidays one year and I was shocked at how good they were. Any time people say that veggies don’t taste good, I tell them they aren’t making them the right way. 400 degrees, avocado oil, and some seasonings go a long way!
The best part…
So when it came time to making this into a meal, I added some chicken sausage (or other protein), potatoes, and a sauce. The sauce, in my opinion, is the secret ingredient. The best part. It’s like an aioli. I like to take the easy way out and start with mayo that is already made versus making the mayo. Lastly, my favorite part of this recipe is that you can literally use any combination of veggies you like. I typically do a combination of broccoli, zucchini, peppers, asparagus, brussel sprouts, and onions. And then of course the potatoes and chicken sausage!

Sheet Pan Sausage & Veggies
Ingredients
- 6-7 cups chopped veggies of your choice (brussel sprouts, asparagus, peppers, broccoli, etc.)
- 2 cups diced potatoes of choice
- 1 pkg diced chicken sausage
- 3-4 Tbsp. avocado oil
- 1/4 tsp salt, pepper, garlic powder
Aioli
- 1/2 cup mayo
- 2 Tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp garlic powder
Instructions
- Preheat oven to 400 degrees.
- Add diced veggies, potatoes and chicken sausage to a large bowl.
- Add oil, seasonings, and toss!
- Spread on a large pan (or 2 depending on size) lined with parchment paper.
- I spray the top with oil and add a little more salt to make sure everything is coated, but this is optional!
- Put in oven and roast for about 20-25 minutes.
- While that is in the oven, mix up everything for the aioli and set aside.
- When the sheet pan dinner is done, drizzle with aioli and enjoy.
