If you’ve been following Katie and me for a while now, you know that we are both obsessed with watermelon and this Summer Watermelon Salad is no different. We pretty much look for any way we can possibly incorporate watermelon into our diets. This salad has a base of arugula and is topped with cubed watermelon, feta and a balsamic dressing. It is such a refreshing and delicious salad for summer.
So every summer for the past five years or so, Brett and I have gone up to Door County to celebrate our anniversary. We love staying at different Bed and Breakfasts and exploring the parks, the shops, wineries and eat at all the delicious food. My goal is to get a Door County travel guide post up soon! We will see how soon I get to it. 😉
One of my favorite restaurants in Door County is Wild Tomato – it’s a pizza place! Well, a few years ago, we were eating dinner there and we usually share a pizza. So we ordered a salad as an appetizer and it was an arugula and watermelon salad. It was so good! I looked on their menu and it doesn’t look like they carry it any more.
So I set out to recreate it and share it with you all! I honestly can’t remember if the salad we had there, had feta or not.. but I love feta so much and think it really adds a lot to the salad. I also love arugula. It’s slightly bitter with a little spice, but I think it pairs perfectly with the watermelon. If you aren’t a fan of arugula though, romaine or mixed greens would work well too!

Summer Watermelon Salad
Ingredients
- 1 container arugula (or mixed greens)
- 2 cups cubed watermelon (bite size)
- 1/4 cup feta
Balsamic Vinaigrette Dressing
- 1/2 cup light olive oil or avocado oil
- 1/4 cup balsamic vinegar
- 1 tsp dijon
- 1 Tbsp honey
- 1/2 tsp salt & pepper
Instructions
- Toss the arugula, watermelon and feta together in a large bowl.
- Add the dressing ingredients to a jar with a lid and shake until mixed.
- Add some of the dressing to the salad and toss.
- Taste and then add more dressing if needed.
- Enjoy!
