Taco Lasagna is another one of those meals I put together on a night when I had no idea what to make for dinner. I’m someone who can’t eat the same thing two nights in a row, or even two weeks in a row. I need variety. Brett on the other hand, could literally eat the same thing every night and be fine! Anyways, I had everything on hand to make tacos, but wasn’t feeling regular tacos, so I thought this might be fun.
I made up the taco meat, made a batch of my favorite dairy free queso (which is FULL of vegetables by the way) and started layering in the ingredients and popped it in the oven. We went over to my mom’s house for dinner that night, and crossed my fingers that it would be good. It absolutely was! It’s hard when you make something for the first time that other people are going to eat and you don’t know if it’s good. But everyone loved it!
Let’s talk about this queso
First of all, any queso or regular cheese would work in place of the queso that I use in this recipe. But let’s chat about this recipe! First of all, I am not a fan of most dairy free cheeses. My girls went dairy free over a year ago. I experimented a lot with different brands, recipes, etc. I hadn’t found anything I really liked, but when I gave this queso recipe a shot, it was a huge hit in our house! Want to know the best part? It is full of good ingredients and it’s easy to make! I make it in the Instant Pot, but I believe you can also make it on the stove. If you give it a shot, please let me know what you think!
Other modifications
Like many of our recipes, this one can honestly be whatever you want it to be. I can be gluten free, dairy free, vegetarian, etc. It’s up to you how you want to modify, but here are some ideas. If you want to make it gluten free, use corn, gluten-free, or grain-free tortillas! To make it dairy free, use this queso recipe. If you want to make it vegetarian, add more beans and even some roasted or sautéed veggies!
I love that there are so many options when it comes to cooking and this recipe has a lot of options!
And let’s not forget about the TOPPINGS
In my opinion, the sauce, the spices, and the toppings make a dish! They are what give it its flavor and depth. The same is true for this dish! We topped it with fresh pico, cilantro, red pepper flakes, and avocado. You can add jalapenos, sour cream, extra cheese, chopped lettuce, etc. There are so many options! And the toppings are where you are going to get in your servings of veggies! Enjoy this with a side salad, some Mexican rice, or a steamed vegetable!

Taco Lasagna
Ingredients
- 1 pkg tortillas of choice
- 1 lb. ground beef
- 1 pkg taco seasoning
- 1 container or pkg queso or cheese of choice
- 1 can refried beans
- 1 avocado
- 1 bunch cilantro
- 1-2 cups chopped lettuce
- 1-2 cups fresh salsa
- sour cream
Instructions
- Start by preheating your oven to 350 degrees.
- Brown the ground beef, drain fat and add seasoning package/water if needed.
- Spray a 9 by 13 baking dish and add a thin layer of ground beef.
- Start by layering in the tortillas until you've fully covered the bottom of the pan. I cut them in half to make them fit better and put the flat edge out.
- Next layer on half the refried beans. You may have to heat the beans up to allow them to spread more easily. This part is a little tricky because the tortillas want to move, but you've got it!
- Next layer on half the ground beef.
- Followed by a layer of queso or cheese! You can decide how much you want here.
- Repeat the steps, starting with layering the tortillas.
- Once everything is layered, bake for about 20 minutes.
- Add toppings of choice and enjoy!
