We have been making this salmon on repeat even since I found it from Caroline Chambers. I love this meal for so many reasons. Everyone in my family is absolutely obsessed with it, it’s such a healthy and well balanced meal, and IT IS SO FAST.

Preparing the Salmon
Yes, I love this salmon recipe, but what I really loved was how Caroline prepared the salmon. I have literally never prepared salmon any differently since.
Prepare a baking sheet with parchment paper. If salmon is not already precut, cut into 2-3 inch slices. Pat dry with a paper towel and top with Dijon mustard. You can measure with your heart, 😉 then spread the mustard. Next sprinkle brown sugar and a little paprika over the salmon.
To get the crispy and delicious top crust, mix together melted butter, panko, and dry oregano. Pat the mixture on top of the salmon. I typically double the recipe for our family of four. Bake for 15-18 minutes at 425 degrees.
Once it is baked through, serve right away with your favorite sides, or go with our suggestions of brussels sprouts and quinoa rice for a healthy, easy, and guaranteed win for your family dinner!

Ingredients
- 2 2-3 inch slices of salmon
- 2 tbsp Dijon mustard measure with your heart
- 2 tbsp brown sugar
- 1-2 tsp paprika
- 2 tbsp butter
- 1/4 cup panko
- 1 tsp oregano
Instructions
- Preheat over to 425 °F
- Line baking sheet with parchment paper.
- Pat salmon dry with a paper towel.
- Spread Dijon mustard over salmon
- Top with brown sugar.
- Sprinkle with paprika.
- Mix melted butter, panko, and dried oregano.
- Pat mixture on top of the salmon
- Bake for 15-18 minutes.
- Enjoy!
