Happy Sunday! Katie here! I am so excited to share this three ingredient sweet potato quiche crust with all of you! This recipe started out as a pizza crust recipe which I adjusted to a quiche crust recipe! I tried it once a few months ago and haven’t looked back since! It is a simple and healthy alternative to ‘regular’ quiche crust.
The three ingredients are:
1. Sweet Potato
2. Egg
3. Rolled Oats
So simple!
As you all know, one thing I try to do on the weekends is food prep for the week ahead. I do not about about you, but I feel like life has (for the most part) gotten back to full swing. And full swing is pretty dang busy around the Buell household. Logan is back to work in the hospitals, I am back in the office most days, and bloggin’ life keeps me VERY busy. Basically every spare minute is spent working on creating content and growing this little blog baby of ours. It is exhausting, but oh so rewarding. Both Melissa and I truly love it so much!
Ok, so back to meal prep. It is essential for us to get some sort of meal prep done on the weekends because if we do not we will be scrambling all week. Our food choices will not be nearly as healthy and nutritious and I will spend more money on lunch takeout. Oh and I feel bad because I have to basically tell the nanny she will have to feed the kids from the freezer all week. Can we say chicken tenders, tater tots and frozen pizza?! lol
Anyways, making a quiche and some sort of muffin or bread on the weekend ensures healthy and nutritious breakfast for our entire family pretty much all week. This three ingredient sweet potato quiche crust is my go-to as is the actual quiche recipe that goes in it.
One beautiful thing about quiche is that you can make so many different varieties and you can put SO many different things in them! It is also one way you can load in the veggies.
3 Ingredient Sweet Potato Quiche Crust
Ingredients
For the Crust
- 1 medium sweet potato – peeled and roughly chopped
- 3/4 cup rolled oats
- 1 egg
For the Quiche Filling
- 5 eggs
- 1/2 cup heavy cream
- 1/2 cup milk
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 5 oz container of baby spinach – chopped
- 1/4 cup crumbled feta cheese
- 3 thin slices of tomato
Instructions
- Preheat your oven to 400 degrees and spray a pie pan with cooking spray.
- Put sweet potato chunks, rolled oats, and egg in your food processor and blend until very fine. (If you do not have a food processor, grate the sweet potato using a cheese grater and hand mix the crust in a baking bowl.)
- Transfer the crust mixture into your prepared pie plate and push it down on the bottom and up on the sides to create the crust.
- Bake at 400 degrees for 20-25 minutes until the crust is slightly toasted and no longer wet looking.
- While the crust is baking, prepare the quiche filling. Put the 5 eggs, heavy cream, milk and salt+pepper in a blender and blend!
- Once the crust is done baking, remove it from the oven and adjust the oven to 375 degrees.
- Place the chopped spinach and crumbled feta in the bottom of the quiche. Poor the egg mixture over the top and place the thinly sliced tomatoes on top.
- Bake at 375 degrees for 35-45 minutes or until the egg mixture is set. Cut into 8 wedges and enjoy!
As you can see in the pictures, I used a pie plate and a tart pan – either works just fine. I have my eye on this colorful one!
