Chicken Taco Soup

A creamy soup with just the rice amount of spice and flavor! A total comfort food!

Ingredients
  

  • 2 chicken breasts (prepared and chopped)
  • 1 medium red onion (chopped)
  • 2 cloves minced garlic
  • 1 pkg taco seasoning
  • 1 can mild green chilis
  • 1 15 oz can rotel tomatoes
  • 1 package frozen sweet corn
  • 1 jar roasted red peppers (chopped)
  • 1 cup shredded carrots
  • 1 cup long grain white rice (rinsed)
  • 2 quarts chicken broth
  • 1.5 cups water
  • 1-2 tsp salt (more or less to taste)
  • 2 Tbsp avocado oil

Instructions
 

  • Add oil to a large pot and turn heat to medium high.
  • Add in onions and garlic and saute until soft.
  • Mix in the taco seasoning and salt.
  • Add in the rest of the ingredients except the cooked chicken.
  • Bring to a boil. Once boiling, reduce heat to a simmer.
  • Add diced chicken, cover, and allow to simmer for another 20 minutes or so, until rice is cooked through.
  • Serve with fresh cilantro, avocado, and tortilla chips!
