Chicken Taco Soup
A creamy soup with just the rice amount of spice and flavor! A total comfort food!

Ingredients

chicken breasts
(prepared and chopped)

red onion
(chopped)

cloves
minced garlic

taco seasoning

can
mild green chilis

15 oz can
rotel tomatoes

package
frozen sweet corn
1
jar
roasted red peppers
(chopped)
1
cup
shredded carrots
1
cup
long grain white rice
(rinsed)
2
quarts
chicken broth
1.5
cups
water
1-2
tsp
salt
(more or less to taste)

Tbsp
avocado oil
Instructions
Add oil to a large pot and turn heat to medium high.
Add in onions and garlic and saute until soft.
Mix in the taco seasoning and salt.
Add in the rest of the ingredients except the cooked chicken.
Bring to a boil. Once boiling, reduce heat to a simmer.
Add diced chicken, cover, and allow to simmer for another 20 minutes or so, until rice is cooked through.
Serve with fresh cilantro, avocado, and tortilla chips!
