Fresh Greek Salad

Ingredients
  

  • 2 cups diced cucumber
  • 1 cup cherry or grape tomatoes (halved)
  • 1/2 cup finely sliced red onion
  • 1/2- 1 cup kalamata olives (based on preference)
  • 1/2 cup feta (block or crumbles)

Dressing

  • 1/4 cup EVOO
  • 1/8 cup red wine vinegar
  • 1 tsp oregano
  • 2 tsp salt

Instructions
 

  • Combine all of the fresh ingredients in a medium bowl.
  • Add the dressing ingredients to a small bowl and whisk until combined. It will thicken.
  • Add sauce to other bowl and stir to coat everything evenly.
  • Enjoy as is, as a side or over a bed of greens!
