Gluten Free Ham and Broccoli Quiche

A simple spin on the classic quiche

Ingredients
  

Crust Ingredients

  • 1 1/4 cup King Arthur Measure for Measure GF flour
  • 1 stick butter cut into squares
  • 5 Tbsp. ice cold water

Filling Ingredients

  • 8 eggs
  • 1/3 cup milk
  • 1/2 cup cottage cheese
  • 1 cup chopped/cooked broccoli I buy a bag of frozen broccoli and let it thaw
  • 1/2 cup diced ham
  • 1/2 cup shredded cheese of your choice
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions
 

  • Preheat the oven to 375.
  • Start by adding the flour and cubed butter to a food processor and pulse until combined.
  • Add in the 5 Tbsp. cold water and pulse until dough is sticky and formed.
  • Spray a round pie pan with oil and then press the crust into the pan. You can roll it out too, but I always just press it down and it works fine!
  • In a large bowl add the eggs and whisk.
  • Add in the remaining ingredients and stir to combine.
  • Pour over the crust.
  • Bake at 375 for about 40-45 minutes or until a fork comes out clean and the top is solid. Enjoy!
