Gluten Free Oatmeal Raisin Breakfast Cookies

Ingredients
  

  • 4 Tbs. butter/ghee (melted)
  • 1 egg
  • 1 tsp. vanilla
  • 3/4 cup almond flour
  • 1/2 cup quick oats
  • 1/2 cup arrowroot (can sub tapioca flour)
  • 1/4 cup coconut sugar (can sub brown sugar)
  • 1/2 tsp cinnamon
  • 1/4 cup raisins

Instructions
 

  • Preheat the oven to 350 degrees.
  • Mix together the wet ingredients (first 3).
  • Combine the dry ingredients (almond flour, oats, arrowroot, coconut sugar and cinnamon).
  • Mix the dry ingredients into the wet ingredients.
  • Add in the raisins and stir to combine.
  • On a baking sheet lined with parchment paper, scoop the dough into one inch balls.
  • Flatten slightly with your fingers.
  • Bake for about 15 minutes or until golden brown on the outside.
  • Cool and enjoy!
