Ham and White Bean Soup

The perfect holiday soup or if just looking for something warm and cozy this winter!

Ingredients
  

  • 2 cups diced ham
  • 2 Tbsp oil
  • 2 tsp minced garlic
  • 1/2 cup diced onion
  • 1/2 cup diced carrot
  • 1/2 cup diced celery
  • 1 Tbsp italian seasoning
  • 2 tsp salt
  • 1 48 oz carton broth chicken or vegetable
  • 2 small yellow potatoes small cubes
  • 1 can white beans drained and rinsed
  • 1 cup chopped kale
  • 1/2 cup *Parmesan for topping optional

Instructions
 

  • Start by sauteing the ham in 1/2 the oil over a medium high heat.
  • Once browned, add the other Tbsp of oil and garlic. Sautee for a min or so.
  • Add in the onion, carrot, celery and seasoning/salt.
  • Mix to combine and cook until soft.
  • Add in broth, potatoes, and beans.
  • Cover and allow soup to boil/cook for about 15-20 minutes or until potatoes are soft.
  • Add ham and kale and stir until kale wilts.
  • Serve with fresh parmesan and your favorite bread/crackers.
