Ham and White Bean Soup
The perfect holiday soup or if just looking for something warm and cozy this winter!

- 2 cups diced ham
- 2 Tbsp oil
- 2 tsp minced garlic
- 1/2 cup diced onion
- 1/2 cup diced carrot
- 1/2 cup diced celery
- 1 Tbsp italian seasoning
- 2 tsp salt
- 1 48 oz carton broth chicken or vegetable
- 2 small yellow potatoes small cubes
- 1 can white beans drained and rinsed
- 1 cup chopped kale
- 1/2 cup *Parmesan for topping optional
Start by sauteing the ham in 1/2 the oil over a medium high heat.
Once browned, add the other Tbsp of oil and garlic. Sautee for a min or so.
Add in the onion, carrot, celery and seasoning/salt.
Mix to combine and cook until soft.
Add in broth, potatoes, and beans.
Cover and allow soup to boil/cook for about 15-20 minutes or until potatoes are soft.
Add ham and kale and stir until kale wilts.
Serve with fresh parmesan and your favorite bread/crackers.
