Healthy Chicken and Cabbage Soup

If you're seeing the word cabbage and afraid you won't like this soup, you need to give it a shot! It's the perfect soup on a cold day or if you aren't feeling well.

Ingredients
  

  • 1 1/2 cup rotisserie chicken (chopped)
  • 1/2 small head of cabbage (chopped)
  • 1 small yellow onion (chopped)
  • 3 celery stalks (peeled and chopped)
  • 4 large carrots (peeled and chopped)
  • 2 tsp minced garlic
  • 1 tsp oregano
  • 1 tsp basil
  • 1 Tbsp tomato paste
  • 2 quarts chicken stock or broth
  • 1-2 cups prepared rice of choice
  • 2 Tbsp avocado oil
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • In a large pot, heat the oil over a medium high heat.
  • Add in the garlic, onion, carrots, celery, salt and pepper.
  • Saute about 5 minutes or until veggies have softened slightly.
  • Add in the basil, oregano and tomato paste and stir to combine.
  • Once combined, add in the broth and cabbage.
  • Cook for about 25 minutes.
  • While the soup is cooking, you can prepare the rice.
  • About 5-10 minutes before you want to eat, add in the rice and chicken.
  • Taste and add more salt and pepper to taste!
