In a large pot, heat the oil over a medium high heat.
Add in the garlic, onion, carrots, celery, salt and pepper.
Saute about 5 minutes or until veggies have softened slightly.
Add in the basil, oregano and tomato paste and stir to combine.
Once combined, add in the broth and cabbage.
Cook for about 25 minutes.
While the soup is cooking, you can prepare the rice.
About 5-10 minutes before you want to eat, add in the rice and chicken.
Taste and add more salt and pepper to taste!
