Healthy Chocolate Chip Pumpkin Muffins

These kid-friendly (and mother approved!) muffins make a healthy grab-n-go brekfast or snack! They are packed with healthy ingredients and sweeteded with natual ingredients.

Ingredients
  

  • 4 eggs
  • 1 15 oz can pumpkin puree
  • 1 cup natural/unsweetened applesauce
  • 1/2 cup coconut oil - melted
  • 1/2 cup pure maple syrup
  • 1/2 cup coconut sugar or brown sugar
  • 2 1/2 cup whole wheat flour
  • 1/2 cup flaxseed
  • 2 tsp baking soda
  • 1 tsp bakig powder
  • 1 Tbsp pumpkin pie spice
  • 1 tsp salt
  • 1 1/2 cup chocolate chips

Instructions
 

  • Preheat oven to 400 degrees. Grease two muffin pans or use paper liners.
  • Beat eggs and mix with pumpkin, applesauce, maple syrup, sugar and oil in a large bowl.
  • Mix flour, baking soda, baking powder, salt, and pumpkin pie spice in a separate bowl.
  • Mix wet and dry ingredients together and then fold in chocolate chips.
  • Fill muffin two muffin tins with batter and bake for 15-17 minutes. Let them cool and enjoy!
