Healthy Chocolate Chip Pumpkin Muffins
These kid-friendly (and mother approved!) muffins make a healthy grab-n-go brekfast or snack! They are packed with healthy ingredients and sweeteded with natual ingredients.

- 4 eggs
- 1 15 oz can pumpkin puree
- 1 cup natural/unsweetened applesauce
- 1/2 cup coconut oil - melted
- 1/2 cup pure maple syrup
- 1/2 cup coconut sugar or brown sugar
- 2 1/2 cup whole wheat flour
- 1/2 cup flaxseed
- 2 tsp baking soda
- 1 tsp bakig powder
- 1 Tbsp pumpkin pie spice
- 1 tsp salt
- 1 1/2 cup chocolate chips
Preheat oven to 400 degrees. Grease two muffin pans or use paper liners.
Beat eggs and mix with pumpkin, applesauce, maple syrup, sugar and oil in a large bowl.
Mix flour, baking soda, baking powder, salt, and pumpkin pie spice in a separate bowl.
Mix wet and dry ingredients together and then fold in chocolate chips.
Fill muffin two muffin tins with batter and bake for 15-17 minutes. Let them cool and enjoy!
