Herb-Garlic Goat Cheese Bruschetta

Ingredients
  

For the cheese spread

  • 4 oz Cream Cheese
  • 4 oz Goat Cheese
  • 2 Tbsp Half & Half
  • 1 tsp Minced Garlic
  • 2 Tbsp Fresh Chives thinly sliced
  • 1/4 tsp Dried Thyme (or 1/2 tsp fresh thyme leaves - chopped)
  • S+P to taste

For the Tomato Basil Topping

  • 2 cups Cherry Tomatoes chopped
  • 3 Tbsp Fresh Basil chopped
  • 2 Tbsp Olive Oil
  • 1 Tbsp Balsamic Vinegar
  • 1/2 tsp Salt

Other:

  • 4 slices Sourdough Bread or french baguette
  • olive oil

Instructions
 

  • Preheat your oven to 400°.
  • Mix together all ingredients for the cheese spread - set aside.
  • Mix together all ingredients for the tomato topping - set aside.
  • Brush bread on both sides lightly with oil and place on a large baking sheet. Toast bread in oven until golden, 10 to 15 minutes, turning halfway through.
  • Let bread cool for 5 minutes, then spread ¼ of the cheese mixture on each of your 4 pieces of toasted bread.
  • Spoon tomato mixture on top and enjoy!

Tips/Tricks:

  • Lazy girl tip: Spray your bread with cooking spray ( or avocado oil spray) and toast in your toaster or toaster oven.
  • Try adding avocado if you are feeling it! :)
