Instant Pot Chili Mac

This is the perfect recipe for a quick weeknight meal or game day!

Ingredients
  

  • 1 lb. ground beef
  • 1/2 onion (chopped)
  • 1 can diced tomatoes (15 oz)
  • 2 Tbsp tomato paste
  • 1 can kidney beans (drained)
  • 1 12 oz box pasta of choice
  • 2.5 cups beef broth
  • 1.5 Tbsp. chili powder (or you can skip the spices and add 1 Hy-Vee chili spice packet)
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 cup sour cream
  • 1/2- 1 cup your favorite cheese

Instructions
 

  • Start by browning the beef and onion using the saute feature.
  • Once browned, add in everything into the Instant Pot except the cheese and sour cream.
  • Stir to combine.
  • Set to manual (the cook time will be the time to cook the pasta divided in half and then subtract 2.). If the cook time is 8 minutes on the pasta box. Cut in half - 4 and then subract 2. So you will set the cook time to 2.
  • Make sure the vent is on sealing.
  • Release pressure once done, and stir in the sour cream and cheese.
  • Serve immediately and enjoy!
