Start by preheating the oven to 400.
Add the diced potatoes to a pan and toss with about 1-2 T of oil (I used avocado) and 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp garlic powder.
Bake for about 20 minutes or until golden brown.
Next cook the sausages on the stove or in an air fryer according to package directions. Once they are done, cut them into small pieces.
Crack and scramble eggs and then in a pan with oil over medium high heat, add the eggs, a little seasoning and cook.
Once everything is cooked, assemble the burrito layering in each ingredient and then fold in the sides and roll up.
Place it in a hot, oiled pan and toast until both sides are browned.
