Sausage Breakfast Burrito

Ingredients
  

  • 1 pkg gluten free tortillas
  • 4-5 potatoes of choice diced
  • 5-6 scrambled eggs 1-2 eggs per burrito
  • 10 Jones Dairy Farm pork sausage 1-2 per burrito
  • 1 cup Shredded cheese of choice
  • 1-2 tbsp Oil of choice
  • 1/2 tsp Salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder

Instructions
 

  • Start by preheating the oven to 400.
  • Add the diced potatoes to a pan and toss with about 1-2 T of oil (I used avocado) and 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp garlic powder.
  • Bake for about 20 minutes or until golden brown.
  • Next cook the sausages on the stove or in an air fryer according to package directions. Once they are done, cut them into small pieces.
  • Crack and scramble eggs and then in a pan with oil over medium high heat, add the eggs, a little seasoning and cook.
  • Once everything is cooked, assemble the burrito layering in each ingredient and then fold in the sides and roll up.
  • Place it in a hot, oiled pan and toast until both sides are browned.
  • Enjoy with fresh fruit and a hot cup of coffee!!
