Start by rinsing/cleaning (if needed) the potatoes and then add them to a large pot of water.
Preheat the oven to 425 degrees.
Boil potatoes until you can put a fork through them easily.
Drain potatoes and put in a bowl with oil and spices.
Toss and then place on a baking sheet lined with parchment paper.
Using another small piece of parchment paper and a glass with a flat bottom, smash the potatoes.
Spray with oil, top with a little more salt and roast for 15 minutes, broiling just a few minutes at the end until golden and crispy!
Mix the aioli ingredients together and drizzle on top or use for dipping!
