Start by dicing 1/2 an onion and mincing garlic, if you don't have it pre minced Add in rice and stir to coat/ lightly toast. Turn off the saute feature and add in 3 cups of broth (chicken or vegetable), 1 tsp. salt and 1/2 tsp pepper. Turn on "manual" for 6 minutes and make sure it's on "sealing". After 6 minutes, release pressure and stir in 1/3 cup shredded parmesan cheese (regular or dairy free work!).
Measure out 1.5 cups of arborio (this is important) rice and rinse
Turn Instant Pot to sauté
Add oil, onion, garlic and cook for 1 minute or until soft
Add in rice and stir to coat/ lightly toast
Turn off the sauté feature
Add in broth, salt, and pepper
Turn on "manual" for 6 minutes and make sure it's on "sealing"
After 6 minutes, release pressure
Stir in 1/3 cup shredded parmesan cheese
