Sheet Pan Sausage & Veggies

The perfect healthy, quick recipe for the whole family!

Ingredients
  

  • 6-7 cups chopped veggies of your choice (brussel sprouts, asparagus, peppers, broccoli, etc.)
  • 2 cups diced potatoes of choice
  • 1 pkg diced chicken sausage
  • 3-4 Tbsp. avocado oil
  • 1/4 tsp salt, pepper, garlic powder

Aioli

  • 1/2 cup mayo
  • 2 Tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp garlic powder

Instructions
 

  • Preheat oven to 400 degrees.
  • Add diced veggies, potatoes and chicken sausage to a large bowl.
  • Add oil, seasonings, and toss!
  • Spread on a large pan (or 2 depending on size) lined with parchment paper.
  • I spray the top with oil and add a little more salt to make sure everything is coated, but this is optional!
  • Put in oven and roast for about 20-25 minutes.
  • While that is in the oven, mix up everything for the aioli and set aside.
  • When the sheet pan dinner is done, drizzle with aioli and enjoy.
