Sweet and Savory Meatball Lettuce Cups

Ingredients
  

  • 1 bag Jones Dairy Farm chicken meatballs
  • 1 head butter lettuce separated
  • 3 green onions chopped for topping

Slaw

  • 1 cup shredded cabbage green and red
  • 1/2 cup shredded carrots
  • 1/2 cup mayo
  • 2 tsp white vinegar
  • 1 Tbsp honey

Sauce

  • 1/2 cup coconut aminos
  • 1 Tbsp grated ginger
  • 1 Tbsp rice vinegar
  • 1 tsp arrowroot or corn starch
  • 1 tsp red pepper flakes optional

Instructions
 

  • Start by adding the frozen meatballs to a pan over medium high heat with 2 Tbsp. of water and cover.  Stir from time to time until browned!
  • While those are cooking, mix together the ingredients for the slaw and the ingredients for the sauce and set aside. 
  • Once the meatballs are done, turn the heat down to medium low and then add the sauce.  Stir to combine and thicken.  
  • Next, assemble the lettuce cups.  Start by adding the slaw to the lettuce cup, and then top with a meatball and chopped green onion!
