Tater Tot Egg Bake
Hear me out. I feel like the tater tots take the "classiness" of this down, but they are actually a game changer in this recipe. You'll have to trust me!

- 1 dozen eggs
- 1/2 cup milk (of your choice)
- 1 lb. breakfast or italian sausage
- 1-2 cups chopped spinach
- 1/2 cup feta (sharp cheddar is good too)
- 1/2 bag tater tots
- salt and pepper to taste
Preheat your oven to 400 degrees.
Spray the bottom of a 9 x 13 pan with oil.
Brown sausage.
Crack eggs into a bowl and whisk with milk while sausage browns.
Layer in the sausage, spinach, and cheese into the pan.
Pour egg and milk mixture over the top.
Top with a little salt and pepper.
Layer the top with tater tots.
Bake for about 35-40 minutes or until tater tots are golden brown and eggs are cooked through.
