Preheat the oven to 400 degrees.
Start by browning the ground beef over a medium heat and add onion.
Once browned, add in taco seasoning and water and turn heat up.
Once combined and slightly thickened, turn heat to low.
Add in corn, diced tomatoes, salsa, and cream cheese or sour cream. (Beans would be great too!)
Mix to combine and then add to an oiled cast iron skillet or 9 x 9 pan!
Top with tater tots and bake for 25-30 minutes or until tater tots are golden brown and mixture is bubbling.
Top with fresh cilantro and sour cream! Enjoy!!
