Veggie Black Bean Burgers

Ingredients
  

  • 1/2 cup chopped onion
  • 1/2 cup chopped red pepper
  • 1/2 cup cooked rice
  • 1 can black beans
  • 1 cup bread crumbs
  • 1 egg
  • 1 Tbsp minced garlic
  • 1 Tbsp ketchup
  • 1 Tbsp BBQ sauce
  • 1 Tbsp worcestershire sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 cup feta
  • salt/pepper to taste

Instructions
 

  • Heat 1 tablespoon of olive or in a skillet on the stove over medium-high heat.
  • Add garlic, red pepper, and onion and saute until soft - about 6 minutes.
  • Transfer the garlic/red pepper and garlic mixture to a food processor and add in all the rest of the ingredients except the bread crumbs. PULSE - DO not blend.
  • After you have pulsed a few more times, add in the bread crumbs and pulse a few more times. You just want to make sure to not over blend so the consistency is correct.
  • Form your black bean burger into patties by scooping out about 3/4 cup into your hands, forming them into a ball.
  • Squish them down on a baking sheet lined with (oil sprayed) parchment paper until they are the shape and size you like for your patties. You can also use a burger press! We have one and it works well!
  • Let them chill in the refrigerator with saran wrap over them for at least 1 hour. Then bake for 20 minutes at 350 degrees, flipping halfway through.
